A Yogi Diary: Comfort food with Emily Charlotte

We all know that friends come and friends go. But what about the friends that stay? What about the friends you meet for the first time but feel like you’ve known forever?

In the past, I’ve featured people who I’ve known either my entire life (because they’re family) or at least since college. But this month, I’m excited to feature a good friend of mine who I have known for less than a year, even though it feels like much longer. If you recall from this past summer, I visited the little town of Durham to see my friend Emily.

Before meeting Emily, I never thought I’d meet someone who celebrates food the same way I do. The first time we went out to dinner together, we were so keen to try everything on the menu it took us over 30 minutes to decide what to order…that night will forever define our times together.

There’s nothing like meeting someone who understands that two stomachs are always better than one, because going halfsies and sharing food is the only way to dine. (Excuse us  while we devour this stack of Flatwhite Pancakes.)

For people like Emily and I, it’s often difficult to narrow down a menu, let alone favorite foods. With that, we’ll get to know a variety of Emily’s favorite comfort foods!

Hello! I’m Emily, and I’m a yoga instructor based in Durham, England.  

As a yoga teacher, I make a conscious effort to eat a healthy, balanced diet. Before I became a yoga teacher, I worked for years in restaurants and cafes (even through university). The places I worked in served impressive dishes made by talented chefs. At home, my family has always eaten delicious and fresh ingredients, so I like to think I know a bit about food.

Also, I have a really big appetite. When I’m not working, most of my activities are centered around food. I’m either eating out, buying food, or cooking food. Wholesome meals and delicious food is something that has always been special to my family, it’s how we were raised. Each meal is something we always celebrate sitting around a table. Whether it be birthdays, Christmas, or a graduation, or a Sunday roast – the food is ALWAYS the main event! 

My favourite kind of food, tends to super fresh ingredients and wholesome. I feel like over the past year, my diet has changed a little. I used to really love eating “a good steak”, but these days, I lean towards a more vegetarian diet (note, I the emphasis on “lean”)

 

My nostalgic food

The traditional “North East food” is a heavy kind of food. Food that keeps your belly full and warm during chilly winters. Pasties, pies, and a Sunday Roast. I can’t say this kind of thing is particularly my favourite food, but I guess it is comforting in that it reminds me of home. Most Sundays mum and dad still make a traditional, Sunday Roast. Roast chicken, pork, or beef, with vegetables, gravy, and Yorkshire Puddings. My grandparents even do the same too!

 

My go to quick wins

We all have a few meals we like to whip up with out having to turn the kitchen into a production.  My go to easy-peasy meals include…

A refreshing caprese salad with fresh tomatoes, mozarella, basil, salt and pepper, drizzled with extra virgin olive oil. So simple, but so delicious!

and

Chinese style noodle dish with garlic, ginger, sesame oil, fried up with egg noodles and soy-sauce. Delish!

 

My favorite sweet snack

A bar of Cadbury’s Dairy Milk Fruit and Nut, straight out of the fridge. I could genuinely eat it all day. 

 

My all time favorite comfort food

You know, its nothing fancy, but mum makes chicken with celery, tarragon and a cream sauce served with rice. It’s one of those dishes that I just can’t make the same way. It’s something that mum just knows how to make and exactly when to make it.

No name, no recipe, but honestly that’s the best part. It’s basically chicken and onion fried together, chicken stock, celery, dried tarragon, salt, pepper and cream served on a bed of Basmati rice.

Ahhh, it’s just one of those things…

Though short and brief, Emily’s diary has quickly taught me that a person’s relationship with food is completely dynamic and can hardly be described by ultimatums. And I’m sure, similar to friends, favorite foods come and go, but then there are the special ones that are here to stay…

  • Cozy Girl … let’s try making Emily”s chicken & onion in cream sauce over bismanti rice when you come home this summer! It sounds yummers! mom :D)))
